Mini Blueberry Pancake Muffins – Frugal Finds During Naptime

I enjoy cooking; however, I really do prefer easy recipes. Maybe when I don’t have a toddler underfoot trying to “help” me, I will get to some more “in-depth” recipes. For now though, I will enjoy this season in my life and share my easy recipes with you all. If your kids like blueberry pancakes, this recipe is a MUST try! It’s super simple, and you can bake it (so you’re not standing over a griddle flipping pancakes).

Make blueberry pancakes for your kiddos without standing over a hot griddle! This is a super easy recipe!

Mini Blueberry Pancake Muffins Ingredients:

  • 1 cup of flour
  • 2 teaspoons baking powder
  • 1 tablespoon of sugar
  • 1 large egg
  • 1 cup of milk
  • 3/4 cup fresh blueberries

Directions:

1. Preheat the oven to 350 degrees and spray a 12 count mini muffin tin with non-stick cooking spray.

2. Combine all of the pancake ingredients and mix well (except the blueberries).

Make blueberry pancakes for your kiddos without standing over a hot griddle! This is a super easy recipe!

3. Carefully pour the pancake batter into each muffin tin filling it about halfway.

4. Add 2-4 blueberries to each muffin (this is an easy job for the kiddos).

5. Bake 13-15 minutes on 350 degrees. Test with a toothpick. If it comes out clean, they are done. Serve with syrup or enjoy as-is!

*Makes approximately 2 dozen mini muffins. If using a regular size muffin pan, you will get about 1 dozen. I’ve included a printable version of the recipe below.
