Crock Pot Chicken Fajitas – Frugal Finds During Naptime

As a busy mom, I’m all about some easy recipes (although I do actually enjoy cooking). Most weeks, the crock pot is my best friend! ???? I LOVE being able to throw ingredients in a crock pot, and by dinner time, dinner is cooked. Today, I’m sharing an easy Crock Pot Chicken Fajitas recipe with you that I came up with . . .don’t worry, I already tested it on my family and it was a hit ;).

Crockpot Chicken Fajitas

Ingredients

  • 1 to 2 lbs. of Boneless Chicken Breasts (I usually make this with frozen chicken and it turns out great)
  • 1 Small Onion
  • 1 Small Green Bell Pepper
  • 1 Package of Fajita Seasoning
  • 1/2 cup of Water

Instructions

  1. Place chicken in the crock-pot.
  2. Slice onions and peppers in long slender slices. Then place on top of the chicken.
  3. Empty the packet of Fajita Seasoning on top of chicken, onions, and peppers.
  4. Add the 1/2 cup of water.
  5. Let it cook for 8 hours on low, or 4 hours on high.
  6. When done, drain the water out of the crock-pot, and shred the chicken.
  7. Serve with warm tortillas, cheese, sour cream, and whatever other toppings you desire.
