As a busy mom, I’m all about some easy recipes (although I do actually enjoy cooking). Most weeks, the crock pot is my best friend! ???? I LOVE being able to throw ingredients in a crock pot, and by dinner time, dinner is cooked. Today, I’m sharing an easy Crock Pot Chicken Fajitas recipe with you that I came up with . . .don’t worry, I already tested it on my family and it was a hit ;).
Crockpot Chicken Fajitas
Ingredients
- 1 to 2 lbs. of Boneless Chicken Breasts (I usually make this with frozen chicken and it turns out great)
- 1 Small Onion
- 1 Small Green Bell Pepper
- 1 Package of Fajita Seasoning
- 1/2 cup of Water
Instructions
- Place chicken in the crock-pot.
- Slice onions and peppers in long slender slices. Then place on top of the chicken.
- Empty the packet of Fajita Seasoning on top of chicken, onions, and peppers.
- Add the 1/2 cup of water.
- Let it cook for 8 hours on low, or 4 hours on high.
- When done, drain the water out of the crock-pot, and shred the chicken.
- Serve with warm tortillas, cheese, sour cream, and whatever other toppings you desire.
