Chicken Casserole Made with Rotisserie Chicken – Frugal Finds During Naptime

Chicken Casserole

I love taking rotisserie chicken and making chicken enchiladas, chicken salad, or my Mawmaw’s Chicken Casserole (my family’s favorite). If you are wanting to take advantage of the free rotisserie chicken promotion at Publix this week, but have NO clue what you would do with a rotisserie chicken here is an easy recipe for you to try.

 

Chicken Casserole

Ingredients

  • 1 chicken
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 cup of sour cream
  • 1 stick margarine or butter, melted
  • 1 sleeve of saltine crackers, crushed
  • salt & pepper to taste

Instructions

  1. Remove the bones from the chicken and tear the chicken into small, bite size pieces.
  2. Mix together soup and sour cream in a large bowl. Then add the chicken to it.
  3. Melt the butter in a small bowl. Then add the crackers to it. (I add a little salt and pepper to it at this point.)
  4. Reserve 3/4 cup of the cracker mixture for the topping. Add the rest of the cracker mixture to the soup, sour cream, and chicken.
  5. Spread the mixture in a greased 8 x 8 inch casserole dish and top with reserved cracker crumbs.
  6. Bake at 350 for about an hour or until bubbly hot.

This is an all time favorite at our house. Last time I made it, I used a lemon pepper rotisserie chicken, and it was divine! ???? I  have substituted Ritz crackers when I’ve been out of Saltine crackers, and it tasted good that way as well.
